Surely, there is little better than mugs full of warm, homemade soup, next to a toasty log fire on a chilly night! This dish is better known as Leek and Potato Soup. Unless you live near a well-stocked supermarket, or have green fingers that plant up a flourishing veggie garden, leeks are not that easy to come by. Luckily, onion is the humble cousin. This delicious alternative recipe was pulled from “Headstart to Cookery”, a recipe book compiled by the mothers of Headstart Pre-Primary School back in 1991. The recipe was submitted by my sister-in-grace, Linda Stone, using the faithful old onion instead, and it takes a heck of a lot of beating! I wonder who from Ixopo, Donnybrook, Creighton, Highflats and Umzimkulu remembers this handiest of recipe books dating back to way back when?
