Yenza ama-patties ayi – 10 - 12

1 kg   i-mince yenyama yenkomo egayiwe ephakathi nendawo

¾      inkomishi ye-oats

1       u-anyanisi, oqotshwe wamncane

2       ithisipuni kagaligi ogayiwe

1       ucezu lwesinkwa olukhulu, eliswakeme ngamanzi amancane, lenziwa izimvuthu

1       iqanda, elishaywe kancane

         usawoti nophepha wokunonga

1       ithisipuni ye-Worcester sauce

1       isipuni (TBSP) we-tomato sause

Indlela Yokwenza

1.      Beka zonke izithak ositsheni esiphakathi nendawo ubukhulu, uhlanganise inhlanganisela ngommese, noma ukuhlanganise ngemfoloko ukuze kuhlangane. (Bheka ithiphu 4)

2.      Hlukanisa inhlanganisela ka-8 – 10. Kubumbe (ungakucindezeli kakhulu) kube yindilinga, izibaca zama-patties engama-2 cm ubukhulu.

3.      Beka ama-patties eshidini lokubhaka eligcotshiwe. Kumboze nge-cling film bese ukubeka efrijini imizuzu engama-20 – 30.

4.      Shisa amafutha epanini elikhulu lokuthosa bese uthosa ama-patties aze abe wumbala onsundu okusagolide macala wonke, ivuthwe.

         5.      Kuphake nebhanisi elisha kanye Nesosi Yechakalaka ka-Caroline kanye nokunye ongakufaka okuthandayo.

Makes 10 – 12 patties

1   kg  medium ground beef mince

¾   cup oats

1    onion, finely chopped

2    teaspoons minced garlic

1    thick slice bread, moistened with a little water, and crumbled

1    egg, lightly whisked

      salt and pepper to taste

1     teaspoon Worcester sauce

1     TBSP tomato sauce

       oil

 

Method

1.    Place all ingredients in a large bowl, cutting the mixture with a knife, or lightly mixing with a fork to combine. (See Tip 4)

2.    Divide the mixture into 8 – 10 portions. Gently shape (don’t firmly press) into round, flat patties about 2 cm thick.

3.    Place the patties on a greased baking sheet. Cover with cling film and refrigerate for about 20 – 30 minutes.

4.    Heat a little oil in a large frying pan and fry the patties until golden brown on both sides, and cooked through.

5.    Serve in a fresh bun along with Caroline’s Chakalaka Sauce and your favourite toppings.

Amathiphu

1.      Uma ukhetha okunempilo, ama-patties angagrilwa esitsheni sokugrila esifakwe kancane amafutha ugrile imizuzu e-5 – 8 icala ngalinye esikhundleni sokuthosa.

2.      Ama-patties angafrizwa. Wasonge ngalinye nge-cling film bese ukuwafriza.

3.      Uma uthanda ibabe kakhulu faka amathisipuni amabili e-paprika, cumin ne-coriander. Uma ufuna “ibabe kakhulu” faka cishe izipuni (TBSP) ezi-4 – 6 ze-Harissa Paste (North African hot chilli pepper paste) kuya ngokuthi ufuna ibabe kangakanani. Yifake imayoneyisi ehlangaisewe ne-Harissa Paste esikhundleni se-Chakalaka Sauce, bese ufaka nokunye okuthandayo.

4.      Ungayifaki kakhulu inyama. Uma uyifaka kakhulu kuba nzinyana ukuyisebenzisa.

5.      Ungayicindezeli i-patty ngesipathula, sebenzisa imfoloko noma uyiphendula kaningana. Izolahlekela umsoco wejusi obalulekile!

Tips

1.    For a healthier option the patties can be grilled on a lightly oiled grill grate for about 5-8 minutes per side instead of fried.

2.    Patties can be frozen. Wrap individually in cling film and freeze.

3.    For a spicier version add 2 teaspoons each of paprika, cumin and  coriander. To add a “bigger bite” add about 4- 6 TBSP Harissa Paste (North African hot chilli-pepper paste) as well depending how hot you like them. Serve with some mayonnaise mixed with some Harissa Paste instead of Chakalaka Sauce, and your favourite toppings.

4.    Handle the meat as little as possible. The more you work it the tougher it gets.

5.    Don’t press the patty with a spatula, prick with a fork or turn frequently. Precious juices will be lost!
